I’m super excited to share this No BakeTWIX® Cheesecake Bites with Brownie Crust recipe. If you like cheesecake, brownies, and Twix candies, you’re going to love this recipe.

My daughter and I planned a mom-daughterdate to watch Disney’s Maleficent for several months. I am not even kidding. The very first email I received about Maleficent was from Catie, and I couldn’t wait for it to be in theaters. When we found out it came out right after my birthday, we just knew it was a sign we needed to have an extra mom-daughter date in May!

We were ready to watch Maleficent the day it opened in theaters, but we had a little extra time. Rather than sit around watching the clock, we decided to run to Walmart and get a few things to take with us to the movies, and yes, I am guilty of “accidentally” bringing candy into the movies on occasion. Well, look there. Next to the SNICKERS Bites is my husband’s and daughter’s favorite candy, and they have it in the bites now. We grabbed 2 of the big bags of TWIX® Bites! One bag was for Catie at the movies, and the other was to make my husband’s cheesecake bites. I left knowing I should have grabbed one morebecause once my husband and the other kids realized I hadTWIX® Bites, they were whininguntil I gave them some.

As soon as we got home, we started getting everything ready for the brownie crust. Once I handed my children the bowl of leftover brownie mix, they were gone, and I didn’t see them again until they were bringing the bowl back. I had to be on high alert because every time I turned around, my husband’s and children were trying to grab a TWIX® Bites! My husband told me I was mean for teasing him with his favorite candy. OMG, here I am making HIM cheesecake bites, a brownie crust, topped with his favorite candy, and I am the mean one. I had to kick him out of the kitchen so I didn’t risk throwing the cheesecake bites at him, lol.

Finally, I was all done with my husband’sNo Bake TWIX Cheesecake Bites, and they looked amazing with the brownie crust. I had to disappear when everyone started to enjoy the cheesecake bites. It was much too tempting, and I am still on my diet and doing great! I do admit, it was super hard to stay strong, but I did it!

Everything turned out great. Shawn and the kids loved our new cheesecake recipe with the brownie crust, and it’s super easy and doesn’t take long at all because it is no bake. The next time you are in the mood for something sweet, give this no-bake cheesecake recipe a try!

No Bake TWIX Cheesecake Bites with Brownie Crust Recipe!

Normally, I use an Oreo crust, but I wanted to try something a little different.Three of my husband’s favorite things are TWIX® candies, cheesecake, and brownies. Why not ditch the Oreo crust for a brownie crust? Sounds pretty good, right? According to everyone in the house, it was amazing. I am going to be honest; I didn’t eat any because of my diet. Well, and the fact that every last one was gone by within two days.

Ingredients

Brownie Crust

  • 1 package brownie mix

TWIX® Cheesecake Filling

  • 2 Packages of cream cheese at room temperature (8 ounces each)
  • 1 can of sweetened condensed milk (14-ounce can)
  • ¼ cup fresh lemon juice
  • 1-teaspoon vanilla extract
  • 1 Package TWIX®Bites (6oz)

Directions

  • Preheat your oven to 325 degrees.
  • Fill cupcake papers with brownie mix, about 1/3 full, and bake for10 to 15 minutes or until completely done. I started checking my brownies after about 7 minutes; they do not take long with such a small amount of brownie mix in each cupcake paper. You can use a toothpick to see if they are finished. Simply poke a toothpick in the center of the brownie; if it comes out clean, you know they are finished. Allow it to cool before making your cheesecake filling.
  • Use10 TWIX® Bites, cut into quarters, and smash some into small pieces. Set aside; this will be your topping. You can also put some of the pieces in with your cheesecake filling if you like. If you choose to put TWIX® pieces in your cheesecake filling, add small pieces of TWIX® last and mix using a spatula or spoon.
  • In a large bowl, use your electric mixer on medium-high to beat the cream cheese until nice and smooth. Slowly beat in condensed milk; be sure to scrape the sides of the bowl and mix well. Add lemon juice and vanilla and mix well. Add TWIX®pieces and mix together using a spatula or spoon.
  • Fill cupcake papers to the top and place in the refrigerator for about 3 hours or until firm.
  • Top with TWIX®Bites, Carmel and Chocolate

FAQs

Why didn't my no bake cheesecake set? ›

The primary reason a no-bake cheesecake is too runny or doesn't set up properly is generally the temperature of the ingredients. If your cream cheese is too warm, the mixture will be too soft and will never set up properly.

Why is my no bake cheesecake base soggy? ›

I'd say it's too much liquid in the cheesecake batter and it didn't set fast enough and the liquid and moisture got into the base. Baking the base would help, but I guess if you need to bake it then there's no point to make a no bake cheesecake. Buiscuits, butter and a bit of cocoa powder for the base.

Should I cover no bake cheesecake in the fridge? ›

No-bake cheesecakes should be stored in the refrigerator to keep them fresh and prevent spoilage. Here are some tips for storing no-bake cheesecakes: Cover the cheesecake with plastic wrap or foil to prevent it from drying out or absorbing any odors from other foods in the fridge.

How do you know if no bake cheesecake is bad? ›

When in doubt, give it a smell. A sour, off-putting odor is a definite sign it has spoiled and should not be consumed. Always store your no bake cheesecake in the refrigerator. If not consuming immediately, cover it with a cake dome or plastic wrap, not foil as it can give off a metallic taste.

Why is my no bake cheesecake base too hard? ›

If your cheesecake base is too hard – this can be down to a few things, such as brands of biscuits, too much butter, or a really cold fridge (or if you froze the cheesecake). Generally I stick to a rule of about 100-150g of butter in a biscuit base.

Does no bake cheesecake get firm? ›

But given time to chill all the way down to 40°F (4°C), which takes about six hours, the filling becomes firm and dense, much more like a "real" cheesecake and far easier to slice. During that time, the filling will lend some of its moisture to the crust, making it considerably less crumbly.

How do you fix a wet cheesecake crust? ›

Another trick you can try — add some ground nuts to the crumbs. Nuts always crisp up nicely and stay crispy better than crumbs do. Another tip: bake the crust for 10 minutes, brush it with an egg wash (beat an egg with a small amount of water) and bake for another 3-4 minutes.

What happens when you overbeat cheesecake batter? ›

Overmixing may lead to cracks and a grainy texture

With a batter mainly composed of cream cheese, sugar, and egg yolks, you can quickly form cracks in your cheesecake with the excess air that comes from overmixing (via Cheesecakes World).

Can you over mix no-bake cheesecake? ›

Mixing the filling for longer than the recipe says.

To my regret, I found a super-soft cheesecake waiting the next day as a result. Try this: Make sure you use room-temperature cream cheese (more on that below) and use a hand mixer or mix by hand to avoid breaking the emulsion created by the cream cheese.

Can you eat Philadelphia no-bake cheesecake filling? ›

Yes, Philadelphia makes a 24-ounce tub of pre-made cheesecake filling that you can use directly from the fridge—no baking necessary. The tub has everything you want from the sugary, sweet, cream cheese filling of a cheesecake, and it's ready to serve as-is.

What brand of cream cheese is best for cheesecake? ›

Philadelphia cream cheese is a popular brand of cream cheese that is often used in cheesecake recipes, but there are many other brands of cream cheese that can be used as well.

Can you leave no bake cheesecake out overnight? ›

Leaving cheesecake out overnight is not recommended, as it can lead to food safety concerns. It should be refrigerated within 2 hours of serving to prevent spoilage and maintain its freshness.

What's better no bake cheesecake vs baked cheesecake? ›

They both are great in their own way. It all narrows down to your personal preferences. If you enjoy dense and velvety cake, a baked cheesecake is the one for you. Or if you crave some light and airy dessert post-dinner, go for the no-bake one.

How long can a no bake cheesecake sit out? ›

The USDA says to avoid the “danger zone” you must place a cooled cheesecake in the fridge within two hours. You can set a timer for yourself so you don't forget and risk wasting all that beautiful, rich dessert.

Can I put my no-bake cheesecake in the freezer to set? ›

For a sturdy no-bake cheesecake with beautifully neat slices, refrigerate for at least 12 hours. This makes for a great make-ahead dessert! Do not freeze the cheesecake to set it. The filling won't slice and you'll lose the velvet texture!

Can you put a no-bake cheesecake in the freezer to speed up the process? ›

We do not recommend freezing our no-bake cheesecake as a way to speed up the chilling and setting process because freezing will impact the texture of both the filling and the crust. We also do not recommend freezing the cheesecake as a make-ahead strategy.
